في عام 1895، أي قبل حوالي 113 سنة، قرر شاب دمشقي يدعى محمد حمدي بكداش، كان يعمل في بيع عصير الليمون البارد، أن يغامر ويجرب في تصنيع مادة غذائية متطورة عن العصائر من خلال إضافة نبات ينمو بشكل بري في الجبال المرتفعة بشمال سورية المتاخمة للحدود التركية تدعى «السحلبة» وهو نبات معروف يمكن إضافته للحليب لتتشكل منه مادة البوظة العربية أو «الإيما». وقرر بكداش أن يفتح محلاً في وسط سوق الحميدية الشهير وتحديداً في الجزء الثاني منه المتجه للجامع الأموي. وبعد أن أطلع الحكومة العثمانية على فكرته ومغامرته فقررت الأخيرة دعمه بإرسال وفد حكومي رفيع المستوى عند افتتاح محله، وبالفعل حقق بكداش ما كان يحلم به وافتتح المحل الذي أخذ شهرة واسعة ليس فقط في سورية بل في البلاد العربية والغربية. وورث ولداه (موفق وهشام) العمل في المحل حيث ما زالا مستمرين في تحضير وبيع البوظة العربية (المسماة إيمع: وهي كلمة تركية تعني البوظة والآيس كريم) وما زال المحل كما أسسه والدهما بديكوراته حتى أصبح معلماً من معالم سوق الحميدية ودمشق القديمة، وأصبحت بوظة بكداش ضمن نسيج دمشق الفلكلوري والتراثي.
حيث ارتبط اسمه بشكل وثيق بسوق “الحميدية” الشعبي التراثي المحلي، فما أن تذكر اسم “الحميدية” حتى تتذكر “بوظة بكداش” في قلب هذا السوق، إن زرت المحل في السابق أو سمعت عنه ممن زاروه وشكلوا دافعاً لديك لزيارته وتذوق هذه البوظة العربية الدمشقية المعروفة في كثير من بلدان العالم بنكهتها.

بكداش أشهر متجر لبيع البوظة في دمشق. تأسس المتجر حوالي عام 1885 في سوق الحميدية بدمشق القديمة.[1][2]. وقد اشتهر بصناعة البوظة المغطاة بالفستق. وبوظة بكداش هي عبارة عن نسيج مرن مصنوع من المصطكي والسحلب. وهي مشهورة في جميع أنحاء العالم العربي وأصبحت منطقة جذب سياحي شهير في دمشق.[1]
